I have not made these but here are the details:
Per Biscuit Calories - 145 Total Fat - 3 grams (Saturated Fat - 1 gram)
Chocolate Lowfat Italian Biscotti
Ingredients:
Vegetable Oil Cooking Spray 2 cups all-purpose flour 1 1/4 cups sugar 1/4 cup cocoa powder 2 large eggs 2 egg whites 1 Tablespoon canola oil 2 Teasspoon finely grated orange zest 1 Teaspoon each orange and vanilla extract 1/2 cup semisweet chocolate chips
Preheat oven to 350. Lightly coat a 15 1/2 x 10 1/2 jelly roll pan w/ cooking spray and dust w/ flour.
In a bowl combine flour, sugar, and cocoa. In a small bowl, lightly beat eggs, egg whites, oil, orange zest and both extracts. Stir egg mixure into dry ingredients to form a dough.
Using a rubber spatula, transfer dough onto the pan. Wet the spatula w/ water and shape the dough into a log about 15 x 3 inches.
Bake for 30-35 minutes, after which time the log will have flattened considerably. Remove from oven and cut croswise into 3/4 inch slices. Place the slices on a clean baking sheet and continue to bake for 15 minutes or until lightly crisp. Remove from oven and place biscotti on a wire rack to cool.
Using a double boiler or microwave oven, melt chocolate chips. Spread chocolate on each biscotti. Return them to the rack and allow chocolate to harden before serving, or cool in the refrigerator.
