Grilled Chicken Burgers
2 Pounds ground dark and white chicken meat 1 Vidalia onion, chopped 1 Yellow or red bell pepper, seeded and chopped 1 Cup fresh mushrooms, chopped 2 Teaspoons garlic, finely minced 1 Tomato, seeded, peeled and chopped 2 Carrots, peeled and finely grated 1 Tablespoon Old Bay seasoning 1 Egg 1/2 Cup fresh bread crumbs Kosher salt Freshly ground pepper to taste
Step 1 Preheat grill to a medium setting.
Step 2 Lightly spray a sauté pan with light oil spray. Sauté each vegetable one at a time. Allow vegetables to cool completely.
Step 3 In a large bowl, mix chicken and vegetables. Add egg, bread crumbs and seasoning.
Step 4 Form mixture into 8 burger patties.
Step 5 Lightly spray patties with light oil spray and place on grill. Grill burgers for 5 to 6 minutes until brown. Carefully flip burgers over and grill for another 5 to 6 minutes. Check for desired "doneness". Burgers should be firm to the touch.
