Flax Banana Bread
1/2 cup light brown sugar 1/2 cup low-fat buttermilk 1 egg or 1/4 cup egg substitute 3tbs canola oil 3/4 cup unbleached all purpose flour 1/2 cup whole wheat flour 3/4 cup GROUND flax seed 1 tsp baking powder 1 tsp baking soda 1/8 tsp salt 1 cup pureed banana
Preheat to 350 F. Coat non-stick 8x4 loaf pan with non-stick spray. In large bowl, combine the sugar, buttermilk, egg substitute or egg, & oil. Whisk until smooth. In medium bowl, combine the flours, flax seed, baking powder & soda, and salt. Whisk to mix. Add to the liquid ingredients. Stir just until blended; do not overmix. Add bananas & stir to mix. Pour into prepared pan. Bake for 40-50 minutes or until a knife inserted in the center comes out clean. Remove the pan to a wire rack, & let bread cool slightly. While it is still warm, turn bread out of pan. Makes 10 slices. Each slice will give you the amount of lignans you would need to eat 18 cups of brocoli or 30 slices of whole wheat bread to get.
