Spicy Turkey Links:
1 pound boneless, skinless turkey breast, cut into 1" cubes 1/2 small onion, minced 1 egg white 1 tablespoon tomato paste 1 teaspoon dried thyme 1/2 teaspoon dried sage 1/2 teaspoon poultry seasoning 1/8 teaspoon ground allspice 1/8 teaspoon ground red pepper 2 tablespoons unbleached flour 2 teaspoons olive oil
In a food processor, combine the turkey, onion, egg white, tomato paste, thyme, sage, fennel seeds, poultry seasoning, allspice and red pepper. Process with on/off turns until the turkey is evenly ground.
Wet your hands and form the mixture into 8 links, using about 1/4 cup mixture for each.
Place the flour on a piece of wax paper. Lightly roll each link in it.
In a large no-stick frying pan over medium-high heat, heat the oil. Add the links and sizzle for 8 minutes, or until burnished on all sides and cooked through.
