Low fat crisp nut cookies:

This resembles the classic cookie mandelbrot.
Crisp and nutty, they are delicious.

Preheat oven to 350 degrees. F.
Cookie sheet lightly sprayed with nonstick vegetable spray.
Makes approx.45 cookies.

2 eggs
3/4 cup sugar

1 tsp. almond extract
2 tsp. vanilla extract
1/4 cup water
6 tbsp. melted butter

2 1/2 cups flour
2 1/4 tsp. baking powder
1/2 cup chopped nuts (pecans/almonds/pine nuts or combination)

Blend well the eggs and sugar. Add almond extract, vanilla extract, water and melted butter.

Add flour, baking powder, and chopped nuts. Mix all together until dough can form a ball.

Divide dough into 2 pieces. Shape into logs approx. 12 inches long. Place on cookie sheet and bake approx. 20 minutes. Remove from oven and cool 5 minutes. Slice at an angle approx. 1/2 " thick.

Lay cookies on side and bake at 350 degrees F. until lightly browned, approx 20 minutes.
