Autumn Spice Squares:
1 1/2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/4 teaspoon ground ginger 1/8 teaspoon pepper 1 egg lightly beaten 1 cup unsweetened applesauce 2/3 cup sugar 1/4 cup vegetable oil 1 teaspoon vanilla extract 1 (8-ounce) can crushed pineapple in juice, drained 3 tablespoons semisweet chocolate mini-morsels Vegetable cooking spray 2 teaspoons powdered sugar
Combine first 7 ingredients in a mixing bowl, make a well in center of mixture. Combine egg and next 4 ingredients; add to flour mixture stirring just until dry ingredients are moistened. Stir in pineapple and chocolate morsels.
Spoon batter into a 13 x 9 x 2 inch pan coated with cooking spray. Bake at 350 degrees for 20 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack. sift powdered sugar over cooled cake. Yield 2 dozen squares.
