My notes on this recipe say that my husband really liked this, that it was kinda like angel food cake-
UPSIDE DOWN CAKE
1/2 cup brown sugar 8 oz. pinneapple slices, packed in their own juice, drained 4 eggs, at room temperature, separated 1 cup sugar 1 cup flour 1 teaspoon vanilla
Preheat oven to 350. Spray a 9”x 9” pan or a 9” round cake pan with non-stick coating spray. Evenly sprinkle with brown sugar;top with pineapple slices. In a small bowl beat egg whites, gradually adding 1/2 cup of the sugar until stiff peaks form. Set aside. In large bowl beat egg yolks with remaining 1/2 cup sugar until thick and lemony-looking. Stir in flour until well blended. Fold in egg whites and vanilla. Spoon into prepared pan. Bake 30 min, until toothpick comes out clean. Immediately invert onto platter. Makes 8 servngs.
