Nut-less Energy Bars
Great for quick breakfasts and snacks as well as those energy intensive mid-winter skiing expeditions!
Mix together until well blended:
1/2 cup shortening 1/2 cup white sugar 1/2 cup brown sugar
Add and mix well:
1 egg 3 tablespoons plain yogurt 1/2 teaspoon vanilla
Blend into this mixture:
1 cup flour 1/2 teaspoon soda 1/4 teaspoon baking powder 1/4 teaspoon salt 1/4 cup milk powder
Add and mix well:
1 cup quick cooking oats 1 cup corn flakes 1/2 cup shredded coconut 1/3 cup dried apple bits*
1 cup semi-sweet chocolate chips for topping (see Topping directions below)
Spread batter into a well-greased 10 inch by 15 inch baking sheet and bake at 350° F. for about 20 minutes or until evenly browned.
Topping: About 5 minutes before these are done, put 1/4 cup water and 1/4 cup sugar in sauce pan and heat to boiling, stirring constantly. Remove from heat and stir in 1 cup semi-sweet chocolate chips, stirring until well blended. Spread chocolate topping on energy bars after removing them from oven, allow to cool and cut into squares.
*Hint: Use your kitchen scissors to "cut" dried apple slices into "bits"!
