FRUIT BARS Full Choice Plan Makes 4 Midday or Evening Meal servings, 1/8 meal each.
1 small apple, pared, cored and grated 1 egg 2 tablespoons plus 2 teaspoons margarine 2 tablespoons granulated brown sugar Artificial sweetener to equal 6 teaspoons sugar 1/2 cup plus 2 tablespoons enriched all purpose flour 1/2 teaspoon double acting baking powder 1/4 teaspoon each salt, ground cinnamon, and apple pie spice 1/2 cup plus 2 tablespoons raisins
In small bowl combine apple, egg, margarine, sugar, and sweetener; stir in remaining ingredients except raisins. Beat until smooth; fold in raisins.
Spray an 8 x 8 inch nonstick baking pan with nonstick cooking spray and spoon mixture into pan. Bake at 350 degrees F. until golden brown, about 25 minutes. Cool; cut into 4 bars.
Each serving is equivalent to: 1 1/2 servings Fruits; 1/4 Egg, 2 servings Fats; 3 servings Extras; 1 serving Bread.
Per Serving 271 calories, 4 g protein, 9 g fat, 45 g carbohydrate, 301 mg sodium.
