I made over this recipe myself. It was my first try at cutting fat and it turned out really well. I hope somebody can use this.
Jen's Fat-Free and Fabulous Carrot Cake
1 1/2 cups applesauce one cup sugar egg whites equal to 4 whole eggs 2 cups flour 2 tsp baking soda 1 tsp salt 2 tsp cinnamon 3 cups carrots, grated
Cream applesauce and sugar. Mix in eggs. Add dry ingredients, mix well. Fold in carrots.
Bake in 2 round layer pans at 325 degrees. Start checking at 35 minutes.
Cream Cheese Icing
1 package neufatchel cheese 1/2 stick light margarine 2 tsp vanilla 1 box powdered sugar
Mix all ingredients. This makes enough to cover the whole cake well so you don't have to skimp in the middle.
