Oatmeal Raisin Cookies

Instead of 160 calories and 6 grams of fat per cookie, this skinny cookie has just 90 calories and 2 grams of fat. So enjoy!

3/4 c. brown sugar, packed
1/4 c. granulated sugar
1/3 c. reduced-fat margarine (see cook's note below)
1 large egg
1/4 c. fat-free half and half
1 tsp. vanilla extract
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1 1/2 c. quick cooking oats
1/2 c. raisins
Butter-flavored cooking spray

1. Preheat oven to 375 degrees. In a large mixing bowl, combine sugars and margarine. Cream ingredients with an electric mixer until well-combined. Add egg and continue to mix. Add half and half and vanilla. Mix until smooth.

2. In a separate mixing bowl, combine flour, baking soda and cinnamon. Stir well. Gradually combine the flour mixture with the egg mixture. Add oats and raisins and stir until combined.

3. Lightly spray a baking sheet with cooking spray and drop cookies by spoonfuls onto the baking sheet. Bake for 9 to 11 minutes or until golden brown. Makes 30 cookies.

Cook's Note: For best results, avoid margarine with less than 60 percent vegetable oil. The high water content causes the cookies to be flat.

Nutritional Analysis Per Cookie: 90 calories, 2 grams fat, 11 percent calories from fat, 5 milligrams cholesterol, 16 grams carbohydrate, 2 grams protein, 25 milligrams sodium, 1 gram fiber, 9 grams sugar
