This is my favorite pizza because it is light and easy. Add a large salad and you have a great summer meal.
Pizza provencal
Serves 8
2 c flour 1 1/3 c semolina flour 1/2 T salt 1 envelope rapid-rise yeast 1/2 t sugar 4 plum tomatoes, cut into rounds 1 red onion, thin sliced 12 kalamata olives,pitted and chopped 1/4 c fresh basil 4 oz partskim mozzarella cheese,shredded
Process the flours,sugar,salt,and yeast. Drizzle 1 1/4 c hot tap water through the feed tube until dough forms a ball.
Spray a glass bowl with cooking spray. Place dough in bowl and cover till it doubles.
Preheat oven to 450 degrees. Cut dough in half and place each ball into a 15" pizza pan. Press dough into pan. Layer with tomatoes, onion, and olives. Scatter with the chopped fresh basil and cheese. Bake 15-18 min.
