For the diabetics in my family, I have used cool whip as an icing, it has 1 g of sugar per serving. To futher reduce the carbohydrate intake, I start with a pound cake and make a fruit filling, sweetened with artificial sweetner and thickened with gelatin. Some times I use sugarfree instant puddings as a filling, then ice with the cool whip. When serving, I try to hand them a slice from the middle, and have somekind of fruit in a sauce to serve on the side. I try to give a small piece of cake and lots of fruit. TI hope this helps.
