Thank you for the recipes, Gladys. I had never thought of using silken tofu as a substitute. I am trying to incorporate more tofu in my family's diet, so this will be a perfect sneak attack. They will never see it coming. (ha,ha) The recipe for coconut looks particularly yummy. I am definately going to try that one first. May I ask if you use an ice cream maker, or just freeze it and scoop it out? I haven't bought an ice cream maker yet, and if I can avoid doing so I would be quite happy. I prefer not to buy one-use appliances if I can help it. Thanks again.
