MARINATED TOFU CUBESSource: 20 Minutes to Dinner: Quick, Low-Fat, Low-Calorie Vegetarian Meals by Bryanna Clark GroganThese have always been well-liked by novice tofu-users in my workshops. They make a great, low-fat alternative to feta cheese, and the drained cubes can be crumbled in salads or on pizza. Cut firm (not pressed) tofu into small cubes, and cover them in a bowl or jar with your favorite fat-free commercial vinaigrette, using cider, rice, or white wine vinegar to avoid discoloration. Cover the container and refrigerate for up to three weeks, shaking the mixture gently from time to time. You can give jars of marinated tofu as gifts by packing the tofu into pint canning jars with springs fresh herbs, whole dried chilies, and whole cloves peeled garlic for decoration and flavoring. A jar of these makes a nice addition to a low-fat, vegan antipasto.
