Recipe: Basic Olive Oil and Vinegar Vinaigrette with Variations (South Beach Diet)

Salads - Salad Dressings
BASIC OLIVE OIL AND VINEGAR VINAIGRETTE

3/4 cup olive oil
1/4 cup vinegar
1 1/2 packets sugar substitute
3/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon dry mustard
1/4 teaspoon ground black pepper

Combine all of the ingredients in a jar and shake well. Refrigerate.

VARIATIONS:
- Add four cloves of crushed garlic

- Add a squirt of lemon or lime juice

- Add two teaspoons of one of the following:
Fresh chopped basil
Minced scallion
Fresh thyme
Fresh marjoram

Makes 1 cup
