I saw this recipe in my local newspaper, just had to share it with you all.
"Fastest Pasta With Spinach Sauce"
1 clove garlic
1/2 tsp. crushed red pepper
about 15 olives, chopped AND/OR 1/4 chopped sundried tomatoes
1/4 cup extra-virgin olive oil
1 lb. long pasta (linguine or spaghetti)
1 lb. spinach, washed, tough stems removed, roughly torn
salt/fresh black pepper
Bring large pot water to boil. Mince garlic finely and combine in bottom of pasta bowl w/redpepper flakes, olives (and/or sundrieds) and olive oil.
Add pasta to boiling water, cook, stir, until nearly done. Plunge spinach into water and cook until wilted (less than a minute). Drain quickly, allow some water to cling to spinach, and toss immediately with garlic mixture in pasta bowl. Season w/salt, pepper, serve! What can be quicker or healthier?
ALTERNATIVES: add fresh Parmesan or Romano; use more chopped sun-dried tomatoes instead of olives (or some minced dried chipotles); use other greens such as chopped kale, collards, chard, etc.
