Besides cutting Tofu up in squares, try using it as you would chopped meat. For instance, I make mock meatballs using drained and mashed tofu rather than beef. I add the grated cheese, breadcrumbs, parsley, garlic powder, and an egg and mix altogether. Then I shape into small balls and fry til golden. I then add them to heated tomato sauce and serve with pasta. Also, realize that tofu takes on the flavors of whatever you add to it since it is so bland. To enhance this, try crumbling it and adding to stir fries rather than using chunks which tend to remain bland in the center. Another good use nutritionally is to add uncooked tofu (about 1/3 cup) to a fruit shake. In a blender place some orange juice, a banana, the tofu, and some Maple syrup (about 2 T.) add an ice cube and blend. You'll have a tasty frothy and healthy breakfast drink. Good luck!
