PASTA WITH RED PEPPER SAUCE (1 serving)
roasted red peppers from jar 1/2 cup ricotta cheese 2 Tablespoon crushed tomatoes basil, oregano, garlic
Put all ingredients in food processor or blender. Heat in microwave and pour over 1 cup of pasta. Add grated cheese
VEGETARIAN CHILI (1 serving)
4 oz. cooked kidney beans 2 scallions, sliced 1/2 green pepper, diced 1/2 can mushrooms 1/2 cup can crushed tomatoes
Combine all ingredients, cook in microwave. Serve over 1 cup rice.
NACHO FLAVORED POTATO WEDGES (my 15 year old likes these)
6 oz baked potatoes(with skin) cut into wedges 2 teaspoon oil 2 oz monterey jack or cheddar cheese 1 tablespoon sliced scallions 1 teaspoon green chili peppers (I use can mild)
On baking sheet, arrange potato wedges in single layer. Sprinkle with sale and pepper, and drizzle oil over potatoes. Bake at 400 degrees for 15 minutes, turn the potatoes, and bake for appx 10-15 more minutes. Combine cheese, scallions, chili pepper; sprinkle over potatoes and bake until cheese is melted.
SEAFOOD SAUCE (not vegetarian)
1 cup of jar spaghetti sauce add cooked shrimp or scallops or crabmeat (any seafood combination you like) basil, oregano, garlic
Combine the ingredients. Heat in microwave and serve over pasta.
