Rhonda, A thought hit me after the previous posting, the Brandy snap recipe should have read "Light corn syrup" NOT OIL, also check the label of custard powder, it just may be made with dried egg powder. Also, if you want any more recipes let me know and I shall be only too pleased to post for you. Angel O:-)

Apple sauce fruit cake

Take 2 1/2 cups unsweetened stewed apple, not drained. While still hot add 1 cup good quality dripping or lard (not butter) and 2 cups brown or white sugar. Allow to melt and cool then add 1 teaspoon cinnamon, 2 teaspoons mixed spice, 2 teaspoons bi-carb soda, 1 lb each currants and sultanas. 1/4 cup chopped almonds, vanilla to taste, and 4 cups plain flour (all-purpose)sifted with two dessertspoons cocoa. (For a richer cake, 1 lb of any other dried fruits may be added) Mix thoroughly and bake in a well greased and paper lined cake tin for 3 hours in a moderately slow oven. Keep in an airtight tin for one week priot to using. Keeps well for months.

Orange tea cakes

Cream together 1 tablespoon butter and 1/2 cup sugar. Add rind and juice of one medium sized orange. Sift in 1 cup self-raising flour to make a soft batter. Bake in little cake containers in moderate oven for about 15 minutes. To serve, split and butter as liked.

Strawberry shortcake

Sift together 2 cups self-raising flour, and 1/2 level teaspoon salt. Add 1 tablespoon superfine sugar, and rub in 3 tablespoons butter. Mix to a scone like dough with about 3/4 cup milk. Bake in 2 greased round cake pans for 15 minutes, or until cooked when tested with a skewer. When cold, fill with whipped cream and sweetened mashed strawberries. Dust with icing (confectioners) sugar.
