G'day Rhonda. Sorry about missing out the temperature. Bake in a hot oven for 15 minutes for the strawberry shortcake. These recipes are taken from a cookbook I have, which has a section of eggless recipes included. They are not regular recipes that have the eggs taken out. No Rhonda, it is not too much trouble, my mum was alergic to oranges, so I know just how frustrating this sort of thing can be, not only for the person who has to suffer this way, but also the family, seeing them. I used to feel so very helpless. Here are three more.

CHEESE BUBBLE BREAD
These are crisp, wafer-thin biscuits (cookies)

Preheat oven to 350*F (180*C)

Ingredients
1 1/2 cups self-raising flour
good pinch salt
good pinch cayenne pepper (optional)
1 heaped tablespoon butter
2 heaped tablespoons tasty, grated cheese
Water or milk to mix

Method
Rub butter and cheese into the sifted flour, salt and cayenne pepper. Mix to a stiff dough with the cold water or milk. Knead very thoroughly for extra puffiness. Roll out very thin (almost like paper) on a floured board. Cut into oblongs or triangles, prick all over with fork, and bake in a moderate oven for about 10 minutes, till crisp and pale brown. Store in airtight containers.

Yum-yums

Preheat oven to 350*F (180*C)

Ingredients
6 ozs butter or margerine
4 ozs sugar
1/2 teaspoon vanilla
1 rounded tablespoon cocoa
1 1/2 cups self-raising flour
pinch of salt
1 cupful of finely crushed cornflakes (about 3 ozs)

Method
Cream shortening, sugar, vanilla and cocoa until soft, smooth and well mixed. Work in sifted flour, salt and cornflakes. Mixture is stiff and requires considerable mixing. Roll into balls, place on a greased oven tray, flatten slightly with fork. Bake in moderate oven for 15 to 20 minutes. Allow to cool on tray. Tops may be coated with chocolate icing if desired.

BUTTERMILK SULTANA LOAF

Preheat oven to 350*F (180*)

2 1/2 cups plain flour. All-purpose
3/4 cup sugar
1 cup buttermilk*
2 teaspoons cinnamon
1 1/2 large tablespoons melted butter
pinch salt

* If sweet milk is used, add 2 level teaspoons cream of tartar to the above ingredients.

Method
Sift dry ingredients, add sugar and fruit, then melted butter and milk to make a soft dough. If too stiff add a little more milk. Mix well and bake in a greased loaf tin in moderate oven forabout 1 hour. For log tin, bake for 3/4 hour. Serve cold, sliced and buttered.
