Ulgen,
This may not be as quick as you'd like, but it is easy, and so Delicious !!! It's from a restaurant in our area. It's a keeper !!!

Black-Eyed Pea's Cheese Broccoli Soup

1 1/2 pounds fresh broccoli
1 pint half and half
2 cups water
1 pound pasteurized process cheese spread, cut into cubes
( Velvetta )
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup cornstarch mixed with 1 cup cold water

Steam broccoli until tender ( microwave on high 6 minutes per pound with florets turned toward center of dish ). Combine half and half and water in top of a double boiler over simmering water. Add cheese, salt and pepper. Heat until cheese is melted. Stir in broccoli.
Stir dissolved cornstarch into cheese mixture and heat until soup thickens. Makes 10 ( 1--cup ) servings.

Note: When I made this I simmered ( steamed ) the broccoli in a little water instead of using microwave. Also cut broccoli up first.
Finally...........if you don't have a double boiler, you can put one pot inside of another. Same effect.
