Hi! This is a tried-and-true favorite of mine. I start with a thin crust dough (I make mine in a bread machine, but you can probably use any type of crust you like). Instead of a tomato sauce base, saute a clove or two of minced garlic in 1/2 T Olive Oil until golden, then add a thawed, squeeze-dried package of frozen chopped spinach. Cook to heat through. Spread this onto rolled out dough (if you like, you can first sprinkle the dough with a bit of mozzarella, then top with spinach mixture, but I normally don't).
On top of the spinach, you can add any veggies you like. I like to add rehydrated sundried tomatoes and thinly sliced spanish onion. It's also good with red pepper and mushrooms. I then top this with a bit of fresh chopped basil to taste, and sometimes crumble a bit of feta on top. Bake about 20 minutes in at 475-500 degrees F.
