This is rich but deliciuos and allways goes down well as a side dish......
Spiced butternut ***************** 4 ozs butter 1 lb butternut,peeled,seeded diced and roasted(1 Lb peeled wt.) 1/2 Lb red onions,sliced 2 garlic cloved crushed 2 bay leaves 1 tsp cumin seeds 1/2 tsp cayenne pepper 2 Tbls fresh coriander
Heat butter and fry cumin seeds for 20 secs,add onions,garlic and saute for 5 mins til soft.Stir in cayenne and coriander leaves,add butternut and warm through. Serves 4 generously
N.B.To roast the butternut I placed in on a baking tray drizzled it lightly with olive oil(the spray one is ideal) and put it in a pre-heated oven for 30 mins til just going brown.
You could add a few bell peppers,roast them and peel and add to the dish as a variation. See what you think love Julie
