ORANGE and BUTTERNUT SOUP **************************** 1 Tbls butter 1 large onion diced 1 Lb butternut,peeled and cubed finely grated rind of an orange 1/2 tsp salt 1/2 tsp ground cinnamon 1/2 tsp ground nutmeg freshly ground pepper 2 cups veggie stock 1/2 cup orange juice
Saute onion in heated butter til soft,,add spices and butternut also stock.cover and simmer for 30 mins,puree then add orange juice and reheat.Serve with a swirl of cream if liked.
I double this rec. and freeze some so I,ve all ways got soup on call!!!!! love Julie
