Saute carrots, onion, celery and garlic in olive oil. Add your pre-soaked peas (I like green and yellow). Cover with a vegetable broth and simmer until peas are soft. Puree soup (either with hand-held type you can put directly into the soup pot or with food processor). No need to add cream. This soup is delicious. I make homemade vegetable broth by roasting vegetable scraps first then simmering in cold water.
