Even my 9 year old daughter ate this:

Pillsbury refrig pizza crust
Pesto sauce mix (buy ready made in jar, not powdered, or make your own)
1/2 c Broccoli florets, chopped
About 6-8 Cherry tomotoes, chopped and drained
Artichoke hearts (canned), thinkly sliced
1 Yellow Squash, thinly sliced
1/2 c chopped Vidalia onion (I love onions, you may not like this much)
2 cloves *fresh* garlic, minced
2 c. Mix: mozzarella, parmesean, and romano cheeses (you can buy this "Italian" prepackaged mix in the cheese section)

Bake the pizza crust according to package directions.
Saute all vegetables except artichoke and tomatoes with garlic in 2 T olive oil until onion just begins to soften.
Spread crust with pesto sauce until covered.
Sprinkle 1/4 c cheese mix over sauce.
Place artichokes pieces, then sauteed vegetables on crust.
Top with remaining cheese.
Bake additional 6-8 minutes or until cheese browns at edges.

Let me know what you think!
