Hi all!! I made a new soup/stew today at work and
liked it so much, I just had to share.
Curried Sweet Potato-Lentil Stew
2 TBSP. butter or margarine
1 large onion,chopped ( 1 cup)
1 TBSP. curry powder
2 TBSP. all-purpose flour
5 cups vegetable broth ( or water ,though not as good)
3/4 cup dried lentils ,rinsed and picked over
1/2 tsp. salt
1/2 cup apple juice
3 cups cubed sweet potatoes ( about 1/2"-1" cubes)
1 cup frozen or fresh green beans
sour cream or plain yogurt for topping if desired

Melt the butter in a large pot over medium/high heat .Add the onions and curry powder and cook,stirring to blend well,for 2 minutes.Add the 2 TBSP. flour, stirring to incorporate flour. Add the broth and cook, stirring constantly until thickened. Add the lentils and salt. Turn heat down to low and cook for 20 minutes, stirring often.Add the apple juice and potatoes, stirring
to incorporate, and cook until the potatoes are tender , approximately 20-45 minutes. Adjust
seasonings if needed. Serve with garnish of
choice.
*** I had to add extra liquid in order to cook
the potatoes.I also used an authentic Indian
curry powder ( a friend is Indian and her mom blends her own Garam Masala,excellant!! It made
all the difference.)

It is a lot better than it sounds, kind of sweet
almost. Well, happy eating !!!
