Hi Renee,

I'm not sure if you want only vegetarian recipes or not so I'm posting two, one of each. The first one is a pasta sauce that makes a lot, freezes well and is good. It looks like a long list, but is easy. The second is Weight Watchers and has lots of veggies hidden. Also very good. Hope they help.

Vegetable Ragout
The Best 125 Meatless Pasta Dishes

2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
1 green bell pepper, diced
1 teaspoon hot pepper flakes
1 teaspoon dried rosemary
1/2 pound mushrooms, chopped
2 medium zucchini, grated
1 tablespoon dried basil
1 tablespoon dried oregano
1/2 teaspoon salt
1 28 oz. can tomatoes in juice
1 28 oz. can tomato puree
2 bay leaves
1/2 cup red wine
1/2 cup Parmesan cheese
2 pounds pasta

Heat olive oil in a high walled heavy skillet. Add the onion, garlic, bell pepper, chili flakes, and rosemary. Stir and saute over medium heat 5 minutes. Add the mushrooms, zucchini, basil, oregano, and salt. Stir and saute 3 minutes. When the vegetables just begin to release their juices, add the tomatoes, tomato puree and bay leaves. Bring to a simmer. Reduce heat to low and cook uncovered 20 minutes, stirring frequently. While sauce is cooking bring water to boil and cook pasta. Meanwhile add wine to sauce and simmer 10 additional minutes. Toss the sauce with pasta and Parmesan.Sloppy Joes

4 teaspoons olive oil
2 medium onions, finely chopped
1 stalk celery, finely chopped
1/2 medium carrot, finely chopped
1/2 medium green bell pepper, finely chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 pound ground beef
1 cup tomatoes, diced, canned
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
2 teaspoons red wine vinegar
1/4 teaspoon Tabasco pepper sauce
salt and pepper
4 hamburger buns

1.In medium nonstick skillet, heat the oil. Saute the onions, celery, carrot, and bell pepper until onions are translucent, 10 to 12 minutes.

2.Stir in oregano and thyme, then add beef and cook, breaking apart until no longer pink.

3.In small bowl combine tomatoes, tomato paste and 2 tablespoons water. Add to beef mixture, cook 1 minute. Stir in worcestershire, vinegar, Tabasco, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally until the mixture thickens, about 10 minutes.
Serve on the rolls. (Says it serves 4, but it makes more than that I think)
