Was searching the web for easy vegetarian meals to make for one person who is constantly on the go. This recipe looks really good and nutritious and will be tried out this weekend. Hope that u guys enjoy!!

Preparation time: 4 min
Serves/Makes: 4 pancakes

Ingredients
1/2 cup semolina
1/2 cup curds(yoghurt - plain)
1/4 cup crushed peanuts
1/4 cup shredded cabbage
1/4 cup capsicum (green or red or yellow)cut into strips
1/4 cup carrots cut into strips
1/4 cup bean sprouts (alfalfa)
1/4 cup spring onion sliced
1 tsp lemon juice
1 tsp Eno's fruit salts
salt and pepper to taste
oil for cooking

Method:
1. Wash the semolina. Soak in the curds and 2 tbs water for 3-4 min.

2. Add the peanuts, salt and pepper. Keep batter aside.

3. In a bowl, mix together all other ingredients with salt and pepper to taste, except oil!

4. In 1/4 portion of batter, put 1/4 tsp fruit salt and mix lightly.

5. Pour it on a greased non-stick pan to get a pancake of 3-4 mm thickness.

6. Spread 1/4 of tooping mixture (vegetables) on the pancake and allow to cook for some time. Then turn over the pancake and coook the other side.

7. Repeat with the remianing batter to get 3 more pancakes.

8. Serve hot and serve with some Salsa or sauce of your choice.
