I'm not Seppo but I have two suggestions. First is Carrot and Feta Lasagna that I found here. If you do a search using carrot and feta, it comes up first. Also
Artichoke and Feta Cheese Pizza:
6 1/2 ounces marinated artichoke hearts, reserve 2 tablespoons marinade 1 tablespoon cornmeal 1 (10 oz.) package refrigerated pizza dough 6 ounces plum tomato, cut into thin rounds 4 ounces Feta cheese, herb seasoned, crumbled 1/2 vidalia onion, medium, thinly sliced 2 tablespoons fresh mint, thinly sliced
Preheat oven to 425 degrees. Cut artichokes into 1/2 inch pieces. Sprinkle baking sheet with yellow cornmeal. Unroll dough onto prepared baking sheet. Press into 11 inch square. Brush dough with 1 tablespoon reserved marinade. Top dough with artichokes, plum tomatoes, feta and onion. Drizzle with remaining marinade. Bake pizza until crust is crisp and golden, about 15 minutes. Transfer to platter. Sprinkle with mint. Cut into 4 squares and serve. Serves 2 or 1 very hungry.
This is fast using prepared dough, but you could make your own.
