This cake is delicious and people who don't like zucchini will eat it (if you don't mention what's in it!).
2 1/2 C. flour 1/2 C. cocoa 2 1/2 tsp. baking powder 1 1/2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 3/4 c. butter 2 C. sugar 3 eggs 2 tsp. vanilla 2 tsp. grated orange peel (optional) 2 C. shredded zucchini 1/2 C. milk 1 C. chopped pecans or walnuts (optional)
Combine dry ingredients; set aside. beat together butter and sugar until blended. Add eggs one at a time to the butter mix. Stir in vanilla, orange peel and zucchini. Alternately stir dry mix and milk into wet mix.
Pour batter into greased and floured bundt pan. Bake at 350* for about 1 hour; cool 15 mins. in pan, then turn out on wire rack to cool. Drizzle with glaze. Makes 10-12 servings.
GLAZE TOPPING: Mix together 2 C. powder sugar, 3 Tbs. milk. |
