TOFU-AND-WATERCRESS PATE

"This pate is light and fresh, and very good served with wheat crackers or rye crispbread."

1 bunch watercress, rinsed, trimmed, and chopped
6 ounces tofu, drained
1/4 cup ground almonds
4 green onions, trimmed, and finely chopped
2 tablespoons chopped fresh parsley
1 teaspoon grated lemon peel
salt and freshly-ground black pepper (to taste)

Place all ingredients in a bowl and mix well with a fork.

Spoon into a dish or bowl and serve with wheat crackers or rye crispbread.
