Nancy:
I have a great fondness for zuchinni, and my favorite way to have it is in the form of zuchinni pizzas!
slice zuchinni into 1/2 inch slices (skin on) top with a dollop of prepared antipasta sprinkle with mozarella cheese bake in over for 10 minutes at 350, or until cheese melts
This is a wonderful appie, and you can also substitute roma tomatoes for the zuchinni -- very yummy! We have it at least once a week! :-)
