RAINBOW SLICES One dough flavored and colored three ways. Makes the tastiest and prettiest cookies. We make these every year at Christmas. They are well worth the effort.
1 cup Butter 3/4 cup sugar 1 egg 1 tsp.vanilla extract 2 1/2 cups All Purpose Flour 1 tsp. baking powder Pinch of salt 4 drops red food coloring 1/4 cup Finely Chopped Red Candied Cherries 1/3 cup Melted Semi-Sweet Chocolate Chips 1/3 cup Finely Chopped Walnuts 1/2 tsp. rum or coconut extract 1/3 cup Shredded or Flacked Coconut
Line a 8x4 loaf pan with waxed paper. In a large bowl beat together butter, sugar, egg, and vanilla until fluffy. Add flour, baking powder and salt, beat till blended. Divide dough into 3 equal portions. Place in pan in this order. 1st.Portion Add: red food coloring and candied cherries. 2nd.Portion Add: Melted choc. and nuts. 3rd.Portion Add: extract and coconut. Cover and refrigerate or freeze until firm. Several hours or overnite. To bake cookies, preheat oven 350 degrees. Invert pan of chilled dough on a cutting board. Peel off wax paper. Cut into 1/4 inch crosswise slices. Cut each slice in 3 equal parts. Place 1 inch apart on ungreased cookie sheet and bake 10 minutes or until edges are golden brown. Remove cookies and cool on rack. Makes about 84 2"x1 1/4" cookies.
