Leigh-Ann,
This is a recipe that we all like a lot. Also, I find it easy to cook a lot of something and put part of it in the freezer, like stews, meatloaf, etc. There are several web sites that are good for these kind of recipes. Go to www.miningco.com and then go to the "busy cooks" section. There are lots of good tips there. Now, for my favorite "fast food" recipe.

Easy black bean Soup

2 T. oil
1 medium onion chopped
2 cloves garlic chopped
1 can diced tomatoes
1/2 cup salsa
2 cans black beans (drained and rinsed)
1 can chicken broth

Saute onicn and garlic in oil until soft. Add remaining ingredients and simmer for 15 minutes. Puree in small batches in the food processor or mash with a potato masher. Return to the pot and heat for a couple of minutes. Ladle into bowls and garnish with sour cream, grated cheese and crushed tortilla chips.
