I hope that I remember all of the questions, If I don't I'll repost the rest of the answers. #1 the quiche--I freeze mine raw in the shell and bake from the frozen or thawed state. From frozen it takes over 2 hours, from thawed, it is normal cooking time. I have frozen it after completely cooked, but some of the liquid from the eggs seeps into the crust after heating, and the crust gets a little soggy. It is still delicious though.

#2 the rice--I freeze rice all the time with great success. Two cautions however, I don't care for it if it has a sauce that it has been frozen with. The other is, let it thaw completely before heating--I have ended up with horribly crispy rice by not doing this.

#3 the beans--this is another dish that freezes beautifully. Chili's, soups, and casseroles with beans are great for the freezer.

#4 I make my pizzas on raw dough and freeze uncooked. My family prefers them this way, again, up to personal preference.

#5. Calzones, I bake then freeze as this makes a great snack or lunch, or quick dinner.
