You may use soy flour and water in place of egg for any recipe for baking, like bread, cakes, cookies etc. The recipe is as follows:
1 heaping Tbsp. of soy flour 1 level Tbsp. water
Mixed together equal one egg.
If you want to use only one egg white, use half the amount for an egg substitute.
As I re-read your recipe, my understanding is you want to make a dry mix in advance. If that is the case then add the soy flour the dry ingredients. When you mix the wet ingredients together, do not forget to add the water for egg needed for this recipe.
I have been using soy flour and water in place of eggs for years know and it is less expensive than eggs, less calories than eggs, and can last a long time in its dry form. (I store mine in the freezer.)
