I had what you COULD call an Individual Mozzarella Lunch today. I have been busy this morning, beginning with getting a Chocolate Chip Cookie Dough Cheesecake (see previous post) in the oven at 6am for a dinner party tomorrow, thanking friends who helped shingle our house. I now have immense taters from Costco in the oven for twice bakes, have been doing loads of laundry in between and feeling good about getting things done. I didn't dare sit down for lunch for fear of losing momentum. I chopped up some basil from the window box, chunked up a tomato, cut up some fresh mozzarella and piled it all in a heap on the plastic cutting board spinkling it with balsamic vinegar and Spanish olive oil. As I walked by while doing my chores I would grab a taste now and then with slices of sourdough baguette. Not the way I usually eat, but kept me moving. Wish I had read your post earlier, as I have leftover chopped proscuitto in the cheese drawer of the refrigerator I could have sprinkled over the pile! Thanks for the post, I think I will be using your reduction for lots of different recipes.
