When I make any kind of b.b.q. ribs I always pre-boil the ribs in a large pot. This seems to give them that "falling off the bone" quality. I am guessing on the timing, because my husband helps if it is b.b.q. so I'll say pre-boil for 35-40 minutes. Drain and b.b.q. over moderate coals, adding the sauce when nearly done. If you add the sauce too soon, it chars.

I like the sauce recipe in Joy of Cooking. I think that Tony Roma's sauce has the taste of Hinez 57 sauce and b.b.q. sauce. I hope this helps. Ginger
