Hubby took daughter fishing unexpectedly and arrived home later than expected also. So I made pork chops (dredged in flour,salt and pepper and browned quickly each side in skillet...then added about a cup or so of water and put a lid on skillet. Cook for about 45 mins or so (keep an eye on the water..don't let it go dry.They will be sooo tender..cut 'em with a fork.I used the leftover water/gravy to make a cornstarch gravy.Also had candied sweet potatoes and peas. Hadn't had any of this for a long while, so it was a nice change.No calorie counting here! :-)
