Cajun Kickoff Dip

Amount Measure Ingredient -- Preparation Method

1 cup boiling water
1/2 cup sun-dried tomatoes
1 1(8oz) pkg low-fat cream cheese
1/2 cup nonfat plain yogurt
1/4 cup chili sauce
1/4 cup chopped green pepper
1/4 cup chopped green onions
1 clove garlic -- minced
1/2 tsp celery seeds
1/8 tsp cayenne

Pour boiling water over tomatoes. Let stand at room temp. for 5-10 min. Drain and chop. Beat cream cheese, yogurt and chili sauce until well blended. Add tomatoes and the rest of the ingred., mix well. Chill well. Just before serving, stir dip. Serve with fresh vegs. or garlic flavored bagel chips.

Beer Cheese

1 (3oz) pkg cream cheese -- softened
1 (8oz) pkg sharp cheddar cheese -- shredded
1 clove garlic -- minced
1 tablespoon Worcestershire sauce
1/2 teaspoon dry mustard
1/4 teaspoon ground red pepper
1/4 cup beer

Beat cheeses at med. speed with an electric mixer until smooth. Add garlic and next 3 ingred.; beat well. Gradually add beer, beating until well blended. Chill 1 hr. Serve with crusty bread or crackers. Yield:2-1/2 cups

Nacho Cream Cheese Dip

Amount Measure Ingredient -- Preparation Method

12 ounces cream cheese -- softened
1 tablespoon finely minced garlic
1 tablespoon chopped fresh cilantro
1 teaspoon chili powder
paprika
1/2 cup shredded lettuce
1/2 cup chopped tomato
2 tablespoons chopped pickled jalapeno (or to taste)
2 tablespoons chopped pitted black olives
1 tablespoon chopped cilantro
Nacho or tortilla chips

Mix together rhe first 4 ingred. Spread evenly over a 10" plate; sprinkle with paprika. Refrigerate 10 min. Remove from fridge and top with remaining ingred. Scoop up with chips.

1 (3 oz) pkg cream cheese -- softened
1/3 cup mayonnaise
3 cloves garlic -- minced
1/3 cup fresh parsley -- chopped
3 cups (12oz) extra sharp cheddar cheese -- shredded
1 cup slivered almonds -- toasted and chopped
1 (4oz) jar diced pimento with juice
1 to 2 tbl Worcestershire sauce
cayenne to taste

Mix all ing. weel. Cover and chill at least 1 hr. Makes 3 cups.
