I do a lot of pork tenderloins since it's only my husband and myself in the household. I preheat the oven to 400 degrees and usually the tenderloin takes only about 20 to 30 minutes to reach 160 degrees internal temperature. Then I let the pork sit for 5 to 10 minutes before slicing.

Your husband, he of the sweet tooth persuasion, should like this mixture as much as mine does:

1/4 cup apricot preserves
1/2 Tbs Dijon mustard
1/2 tsp dried thyme
1/4 tsp salt

Mix all of the above together and brush over the pork tenderloin; any extra can be brushed on halfway through cooking.

And that's it! Sweet and simple!

We especially like this with Uncle Ben's Long Grain & Wild Rice mix.
