I meant to post this with the Lemonade recipe...!
Last summer I went berry picking up in Vermont...( One for the bucket ...and Two for the mouth!!!) In anycase I still ended up coming home with more berries than my freezer could manage. So I went on a hunt for someway to keep these red diamonds... I found a recipe for a berry syrup...that can be used for almost anything from pancakes and waffles to my favorite... a topping for vanilla icecream!!! One night my roomate and I had friends over for dinner...and found that the only thing we had left to offer was club soda... (How embaressing!!) So as I looked around for something else to offer I saw that I had that Raspberry syrup I so loved on my icecream...In desparation... I decided to do what any airline flight attendant would have done... I started mixing the raspberry syrup with the club soda...and before I knew it we had a hit!!! Here is the raspberry syrup recipe...and I guess you could do this with strawberries, blueberries...or whatever!!!
BERRY SYRUP for BERRY SODAS:
Combine :
1 1/2 cups water 3 cups sugar 1/2 tsp. salt in a medium saucepan.
Cook without stirring, over high heat until the syrup reaches 200F on a candy thermometer.
Stir in 2 cups berries (chopped if large like strawberries); and cook for 2 minutes more. Cool and then refrigerate.in an airtight container...for up to 2 months...
To make sodas... use 2 to 3 Tablespoons of syrup per large glass...and add club soda... Like the lemonade recipe... if it is not sweet enough just add more syrup!!!
