Here is a recipe I developed. The combination of wine and beer in the recipe makes for a complex and savory flavor.
Briz's Wine Country Chili
1 T. olive oil 1 lb. lean ground turkey 1 lb. Turkey Store seasoned turkey chops or pork chops, cubed 1 medium Spanish onion 2 heaping T. minced garlic 3 T. chili powder 1 T. paprika 1 T. coarse ground black pepper 1/2 T. ground cumin 1/2 T. oregano 1/2 t. coriander 1/2 t. cayenne 1/2 t. chile caribe 1 cup Napa or Sonoma Valley zinfandel wine 1 16 oz. jar of medium salsa 1 15 oz. can Hunt's Ready Italian style tomato sauce 1/2 cup demi-glace 3/4 cup beer 1 15 oz. can kidney beans, drained
Sauté the onion and garlic in the oil. Transfer to large kettle. Brown the ground turkey, drain, and transfer to the kettle. Repeat for the seasoned turkey chops. Add the remaining ingredients, except the beans, and bring to a boil. Reduce heat, and simmer 1 1/2 to 2 hours. Add the beans towards the end of cooking. Serve. :-)
