This is what we are having tonight. Have a lot of garden vegetables to use. POLISH AND VEGETABLE SAUTE serves 2 but easy to double 2 Polish sausages, sliced 1/4 inch thick 1 onion, minced 2 cloves garlec, minced 1 small bell pepper, diced 1 zucchini, cubed into 1/2-inch pieces 1 yellow squash, cubed 1 scallop, squash, cubed 1 large fresh tomato, skinned and diced Cook sausage in skillet until lightly brown and fat is rendered. Remove sausage and set aside. Saute onion, garlic and bell pepper in fat remaining in pan until soft. (Drain some of the fat if there is too much.) Add diced tomato and cook until softened, about 3 minutes. Add squashes and cook coverd for about 4-5 minutes. Return sausage to pan and cook until heated through and vegetables are cooked to your taste, Season with salt and pepper. Serve with rice, potatoes or noodles. I'm having rissotto cakes made from lefover rissotto.
