I have made chili for a long time but this recipe came out of desperation of trying to get a meal made up with what I left in the pantry when visitors showed up one evening before dinner.

The various canned goods are what I scrounged up at the time but this chilli tasted better than my usual so I now use this recipe instead.

This is made for 6-8 people:

1 (28 oz) can crushed tomatoes
1 can tomato sauce
1 can Rotel tomatoes with chiles, diced
1 can of black beans
1 can tomato paste
1 can of baked beans in tomato sauce (veg type)
2 beef boullion cubes crushed
1 lb ground beef cooked and drained
1 large onion, chopped
1 large green pepper, chopped
2 red chile peppers, chopped finely
1 pkg chili seasoning
2 tsp chili powder,
1/2 cup strong black coffee

Mix all ingredients and simmer for an hour or longer, can put in a crockpot and leave.

I served this with cornbread of course.
