I am married to a diabetic and cut fat several different ways.

This is the way my mother made stuffed peppers because my dad didn't like rice very much.

4 large peppers
1# ground round
6-8 slices of bread
1 or 2 carrots -- scrubbed, chopped
1 med. onion -- chopped
1 1/2 cups beef or chicken broth
the spices your family likes for stuffing
2 -3 ribs celery -- strings removed and chopped
(Or a box of stuffing mix)
1 can tomato soup

Brown meat and veggies in pan sprayed with Pam. Blot with paper towels. Return to pan which has been wiped out. Add cubed bread and broth. May only take 1 cup of broth. Start with i cup and add the rest if needed. Meanwhile, parboil prepared peppers. Stuff with meat mixture and make bottoms of peppers level of necessary, so they'll stand up in pan. Fill pepper-filled pan half up with hot water. Cover peppers with soup. Bring to a boil and simmer on stovetop until done about 45 min. to one hour, adding more water, if necessary. Oops! Cover with pan lid or foil before cooking.
