Cucumber Salsa (from Vegetables on the Side by Sallie Williams)
1 large or 2 medium cucumbers, peeled, halved lengthwise, seeded and cut into 1/4 inch dice 1/2 med. red bell pepper, seeded and cut into 1/4 inch dice 1 bunch scallions, sliced 1 clove garlic, minced 1/2 jalapeno pepper, seeded and minced, or more to taste 1 medium tomato, peeled, halved, seeded and diced 1/4 cup chopped fresh cilantro or parsley 2 TBS fresh lime juice 3 TBS olive oil salt and fresh ground black pepper to taste
Combine all ingredients and refrigerate for several hours. Bring to room temperature to serve.
