Heather, here's a side dish that I like not only for its taste but because you can prepare everything ahead of time, and then just do the baking part when you're ready to serve. These potatoes taste great with any grilled meat.

Twice-Baked Potatoes
(Makes 8 Servings)

4 large baking potatoes, baked
1 8-oz pkg cream cheese, softened
1/3 cup milk
1/2 tsp salt
1/8 tsp pepper
1/4 cup chopped green onions
4 slices bacon, cooked until crisp, crumbled

Cut potatoes in half lengthwise and scoop out centers, leaving about a 1/8" shell.

Mash potatoes and cream cheese. Add milk, salt, and pepper. Beat until fluffy. Stir in onions. Spoon into shells. Place stuffed potatoes on cookie sheet and top with bacon. (Can be made ahead up to this point.)

When you're ready, bake at 350 degrees for about 20 minutes, or until thoroughly heated. Everyone loves these!
